Lowfat Apple Banana Oatmeal Muffins

I make no qualms about being a chocolaholic. I mean-I love me some chocolate-BUT I also like fitting in my jeans. It’s all about balance right? So while some days I’ll splurge on my favorite chocolate treats other days I like to have healthy options like these Apple Oatmeal Muffins to snack on when I need a fix for my sweet tooth. These muffins have no added sugar, are lowfat, can be made gluten free, and can be ready to eat in just twenty minutes! They are perfect for breakfast, snack, and even dessert!

Ingredients:

  • 3 ripe bananas, mashed
  • 1/3 cup unsweetened applesauce
  • 2 cups old fashioned oats (be sure to get gluten free oats if your diet requires it)
  • 1/4 cup lowfat milk
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon

Instructions:

Preheat oven to 350 degrees F. In a medium bowl combine all ingredients and mix until well blended. Line a muffin tin with liners and spoon mixture into pan, filling to the top of the tin (batter will not rise at all.) Bake for 12-15 minutes or until firm. Allow to cool slightly before eating. Makes 6-8 muffins depending on banana size.
