Do you like spicy? I hated anything remotely spicy growing up but as I’ve gotten older, especially the past few years, I have grown to love spicy flavors more and more.  My husband has always been a huge spicy food fan so I knew he’d love this recipe for Slow Cooker Spicy Mexican Chicken Tacos!

Now a word of warning-these are spicy, really spicy in an amazing way! They’re also super easy-just plop three ingredients in the crockpot in the morning and add the fixins’ at dinner time. You can also use this meat recipe for burrito bowls, over salads, or even on it’s own! I love it, and I hope you do to!

Ingredients

  • chicken breasts
  • diced tomatoes and green chiles
  • chipotle peppers in adobo sauce
  • taco shells- soft or hard

Step by step

This is probably the easiest recipe on the blog!

Simply toss the chicken, tomatoes, and chilis in the Crock Pot and let it work its magic! Six hours later easily shred the meat with two forks and mix. You’ll have tacos with the perfect amount of spice to eat as you wish!

Tips for best results

  • use a slow cooker liner for easy cleanup
  • if you don’t want to shred the chicken by hand you can also use a hand mixer to do it for you!
  • adjust the spice down by omitting the chipotle peppers in adobo sauce
  • balance out the spice by serving with refreshing agua fresca!

Ingredients

  • 1.5 lb chicken breasts (about 3 large breasts)
  • (2) 10oz cans diced tomatoes and green chiles (mild)
  • 7 oz can chipotle peppers in adobo sauce
  • taco shells of your choice
  • taco toppings of your choice-I use chopped peppers, avocado and cilantro

Instructions

  1. Add chicken, tomatoes, and peppers to a slow cooker and stir to mix.
  2. Cook on low for 6 hours.
  3. Use two forks to shred the chicken and stir again to mix with the sauce.
  4. Serve with tacos and toppings of your choice or as desired.
