Easy Greek Roasted Potatoes

Easy Greek Roasted Potatoes are a great family-friendly weeknight side dish! Serve them with Steakhouse-Style Steak with easy Peppercorn Sauce for an easy, restaurant-quality meal!

My grocery bill has gotten a little out of control. I’m going to blame packing three school lunches a day, but seriously people, these kids are eating me out of house and home!

To try and save a little money I’ve been trying to incorporate more budget-friendly from-scratch recipes into my menu rotation. I’m especially trying to experiment more with potatoes and these easy Greek roasted potatoes are definitely a winner!

Ingredients

  • potatoes
  • lemon
  • garlic
  • olive oil
  • dijon mustard
  • dried oregano

Choosing potatoes

You can make these with whatever potatoes you have on hand. I normally prefer to roast russet potatoes because those are what I commonly have on hand. Yukon Gold and fingerling potatoes are also great for roasting.

The measurements will season enough to feed our family of five, about 6 large potatoes. It’s not an exact science so feel free to experiment with the measurements to customize it for your taste!

Step by step

  1. Preheat oven to 400 degrees and line a baking sheet parchment paper or spray with nonstick.
  2. Mix all ingredients except potatoes in a large bowl. Add the potatoes and stir to coat. You may also add potatoes and marinade to a bag, seal, and shake to coat.
  3. Spread the potatoes in a single layer on the baking sheet. Bake uncovered for 25 minutes.
  4. Remove pan from oven, stir and flip potatoes, and bake an additional 25 minutes uncovered or until golden brown.

These potatoes lasted all of ten minutes at dinnertime at my house the other night. In fact, I hadn’t even planned on sharing the recipe but they were such a big hit I made them the next night again so I could take pictures and share them with you too!

How to Make Crisp Potatoes in the Oven

  • Don’t crowd the potatoes on the pan, allowing room around them helps them to crisp up.
  • For extra crisp potatoes soak them in water to remove starch beforehand. Be sure to thoroughly pat dry before seasoning and baking.

How Long do You Roast Potatoes at 400 Degrees?

I recommend roasting the potatoes for about 50 minutes, stirring halfway through. Depending on the type of potato you use and the size of the pieces your baking time may be shorter or longer. Keep an eye on them and watch for that crispy golden brown color.

Ingredients

  • 2 pounds potatoes of your choice, cut into 1″ cubes
  • juice of one lemon
  • 1/3 cup extra-virgin olive oil
  • 4 cloves garlic, minced
  • 2 tablespoons Dijon mustard
  • 2 tablespoons dried oregano

Instructions

  1. Preheat oven to 400 degrees. Spray a baking sheet lightly with nonstick spray.
  2. Combine everything except potatoes in a large bowl and whisk until blended. Coat potatoes in mixture in either a large plastic bag or large bowl.
  3. Spread potatoes in a single layer on the prepared baking sheet.
  4. Roast uncovered for 25 minutes, stir and roast another 25 minutes or until golden brown.

  1. In the same boat here with kids! It’s hard to find quick meals to prepare that they will eat that are also healthy. I love anything one pan and this looks pretty easy, will have to try.
