Instant Pot Beef Tips

What cut of meat are beef tips?
Beef tips are not a particular cut of meat, you can use almost any cut to make them. Tenderloin, sirloin, or even chuck roast can be cut into beef tips.
You can also use the stew meat that comes pre-cut at the grocery store. You can save money if you have the time by purchasing a chuck roast and cutting it into beef tips yourself at home.
Regardless of which cut you use, cut it into 2-inch chunks to make your beef tips. I recommend saving money on a more inexpensive cut of meat for this recipe as we pressure cook it to complete tenderness.
How to make beef tips tender
The key to making these more inexpensive cuts of meat tender is to make sure you have the correct cook time. It takes time for the cartilage and fat to break down and make the meat tender.
For 2-inch steak cubes I recommend a 30 minutes pressure cook time.
Ingredients
- olive oil
- beef tips
- butter
- onion
- beef broth
- French onion soup
- Worcestershire sauce
- bay leaf
- salt and pepper
- cornstarch
- mashed potatoes, rice, or pasta for serving
Step by step
- Set your Instant Pot to sauté and add olive oil and meat.
- Sear the meat on all sides, then remove to a plate.
- Add butter and onion and cook until tender, about 4-5 minutes.
- Return meat and any juice to the Instant Pot along with broth, soup, Worcestershire, and bay leaf.
- Place the lid on the pressure cooker and set to manual high pressure for 30 minutes. Allow to release naturally for 20 minutes before carefully venting.
- Make a cornstarch slurry with 3 tablespoons of cornstarch and 1/2 cup cool water. Stir until smooth.
- Add cornstarch slurry to the Instant Pot and stir until thickened.
- Season to taste with salt and pepper.
Serving suggestions
Serve these yummy beef tips over mashed potatoes, pasta, rice, mashed or riced cauliflower, or own its own with some easy drop biscuits, Texas toast, or garlic bread to help mop of that tasty gravy.

Ingredients
- 2 tablespoons extra virgin olive oil
- 2 pounds beef tips *see note
- 2 tablespoons butter
- 1 small yellow onion, diced
- 2 cups beef broth
- 10.5 ounce can condensed French onion soup
- 1 tablespoon Worcestershire sauce
- 1 bay leaf
- 3 tablespoons cornstarch
- salt and pepper to taste
Instructions
- Set Instant Pot to sauté mode. Add olive oil and meat to the pot.
- Brown meat on all side and remove to a plate.
- Add butter and onion to the pot. Cook until onion is tender, about 4-5 minutes.
- Return meat to the Instant Pot along with any juices. Add broth, soup, Worcestershire, and bay leaf.
- Close Instant Pot and set to manual high pressure for 30 minutes.
- Allow to vent naturally for 20 minutes before carefully venting and removing top.
- Set to sauté mode.
- In a small bowl combine cornstarch with 1/3 cup water. stir until smooth.
- Add to gravy and stir until thickened. Turn off sauté mode and season to taste with salt and pepper.
Notes
You may use any cut of meat for the beef tips: tenderloin, sirloin, or even chuck roast can all be cut into 2 inch pieces. You can also use pre-cut stew meat.
