Mudslide Latte Cocktail

Indulge in this rich, creamy Mudslide Latte Cocktail made with Bailey’s Irish Cream, vodka, whipped cream, and of course, chocolate!

When we were in Ireland recently I went on an Irish coffee kick and fell back in love with Bailey’s Irish Cream after taking quite a long break from drinking it. There’s something so comforting about that rich flavor and I was inspired to combine it with coffee to make a Mudslide Latte Cocktail to share with friends recently.

Combining the Bailey’s with whipped cream flavored vodka adds to the richness of this indulgent drink. The liqueurs are combined with cooled coffee, half and half and topped with a dollop of whipped cream and some shaved chocolate (because everything is better with a little whipped cream and chocolate, right?)

This drink reminds me a lot of a White Russian but with a little special kick from the Baileys. When I’m going to make it I usually brew an extra cup of coffee in the morning and pop it in the fridge until later in the day when I’m ready for a cocktail. I like that chilling the coffee eliminates the need to use ice because milk-based cocktails are awful when they get watered down, don’t you think?
