Coconut Snowballs (Gluten Free Cookie Exchange Dessert Recipe)
It’s cookie exchange season! I love cookie exchanges because I’m a baking addict and love trying new recipes. Over the years though I’ve been increasingly more aware of the vast variety of food allergies and food intolerances friends and family might have so I like to keep some recipes handy for those in my life that may have diet restrictions. These Coconut Snowballs are one of those go-to recipes for my gluten-free friends. With only three ingredients they can’t be any easier to make (they’re no bake too!) Whip them up and they are ready to gift within the hour!
These snowballs taste like the inside of a Mounds bar-coconut perfection! I have in the past coated them with chocolate but honestly, I like them better naked (shocking!) Adding the chocolate coating adds time to the process and they taste perfectly sweet without but feel free to try it both ways if you are feeling bold!

Description
Gluten free Coconut Snowballs are the perfect dessert recipe to take to holiday gift exchanges. Only 3 ingredients and allergy & intolerance friendly.
Ingredients
- 2 cups powdered sugar
- 1/2 cup coconut oil
- 2.5 cups shredded sweetened coconut
Instructions
Line a baking sheet or plate with wax or parchment paper.
In a medium bowl melt coconut oil for thirty seconds in the microwave to liquify.
Stir in powdered sugar until blended. Add coconut and mix with hands.
Form mixture into 1″ balls and place on prepared plate. Freeze for 20 minutes or until ready to package.
