Bellini Cocktail
The Bellini is a refreshing peach and Prosecco cocktail perfect for brunch or happy hour!
Today I wanted to share a very simple and easy cocktail with you today, a Bellini Cocktail! It feels almost wrong to call it a cocktail because there’s only two ingredients-peach nectar and sparkling white wine!
Who Invented the Bellini?
The Bellini was invented sometime between 1934 and 1948 by Giuseppe Cipriani. Cipriani was the founder of Harry’s Bar in Venice, Italy, a popular bar made famous by Ernest Hemmingway. The drink was called the Bellini because its unique pink color reminded Cipriani of the toga of a saint in a painting by 15th-century Venetian artist Giovanni Bellini.
What is the Difference Between a Bellini and Mimosa?
Mimosas are made with equal parts of orange juice and sparkling wine. A Bellini is two parts sparkling wine with one part peach nectar.

You can find peach nectar in the juice aisle at most grocery stores or you can order it online (affiliate link.)
What Kind of Wine is in a Bellini?
The Bellini is traditionally made with Prosecco but other sparkling white wines such as Champagne or Cava will work perfectly as well.
How Do You Garnish a Bellini?
I like to garnish with a peach wedge and fresh rosemary to make this little baby look as good as she tastes!

Description

Ingredients
- 1.5 ounces peach nectar
- 3 ounces sparkling white wine
- peach slices and rosemary sprigs for garnish if desired
Instructions
- Mix peach nectar and chilled sparkling white in a flute, pouring wine first.
- Garnish if desired and enjoy immediately!
